This is my morning congee.
As I mentioned previously, I’m starting to feel a cold come on. This and the fact that I had leftover brown rice and a sweet potato in the fridge, brought me to the conclusion to have some congee this morning.
Congee is a tradition east asian soup or porridge often had in times of struggle. It’s very simple - use cooked leftover rice and a sweet potato, cook them together until the rice starts breaking down. Some people like to add other things as well, either on the savory or sweet side, but I like to keep mine simple.
The health aspect in congee comes from it’s simplicity. When I first heard about I found lots of people posting about how it comforted them when they were sick and reminded them of home. As you can imagine, potato, rice and water is very easy to digest (usually this came be had if you’re feeling a little sick to your stomach), not to mention sweet potatoes are amazing nutritionally. This is a great detox meal.
The last time I had this and I was feeling a little sick, I remember feeling a little better afterwards. That and I just like it, its good for mornings where I just want something warm, simple and comforting. It’s kind of a substitute of chicken noodle soup for me as I won’t be partaking in the chicken.
